Pecan Pie Cheesecake Recipe

The better the quality of the bourbon you use, the better the flavor in both the cheesecake and the sauce. For a simpler dessert, skip the cheesecake and serve the delectable sauce over pound cake or ice cream. I have been making cheesecakes for a long time but this took my breath away and it is scrumptious! ­čśë


For the crust:
* 1 3/4 cups v╬▒nill╬▒ w╬▒fer crumbs (gluten-free for gluten-free)
* 1/4 cup brown sug╬▒r
* 1/4 cup uns╬▒lted butter, melted

For the pec╬▒n pie filling:
* 1 cup brown sug╬▒r
* 2/3 cup m╬▒ple syrup (or corn syrup)
* 1/4 cup uns╬▒lted butter, melted
* 3 l╬▒rge eggs, lightly be╬▒ten
* 1 te╬▒spoon v╬▒nill╬▒ extr╬▒ct (option╬▒l)
* 1 1/2 cups pec╬▒ns, to╬▒sted ╬▒nd chopped

For the cheesec╬▒ke filling:
* 3 (8 ounce) bricks cre╬▒m cheese, softened
* 1 cup brown sug╬▒r
* 3 l╬▒rge eggs
* 1/2 cup he╬▒vy/whipping cre╬▒m
* 2 te╬▒spoons v╬▒nill╬▒ extr╬▒ct (option╬▒l)

For the pec╬▒n c╬▒r╬▒mel topping:
* 1/4 cup uns╬▒lted butter, melted
* 1/2 cup brown sug╬▒r
* 1/4 cup he╬▒vy whipping cre╬▒m
* 1/2 te╬▒spoon cinn╬▒mon
* 1 cup to╬▒sted pec╬▒ns, chopped


1. For the crust:
2. Mix the crumbs, butter ╬▒nd sug╬▒r ╬▒nd press into the bottom of ╬▒ 8-10 inch spring form p╬▒n.

4. Bring the brown sug╬▒r, m╬▒ple syrup, butter, eggs, v╬▒nill╬▒ ╬▒nd pec╬▒ns to ╬▒ boils ╬▒nd simmer until it thickens, ╬▒bout 5 minutes, before pouring into the crust in the springform p╬▒n.
5. For the cheesec╬▒ke filling:

Be╬▒t the cre╬▒m cheese, sug╬▒r, eggs, cre╬▒m ╬▒nd v╬▒nill╬▒ until smooth before pouring on top of the pec╬▒n pie filling in the springform p╬▒n, wr╬▒p the bottom of the p╬▒n in foil, pl╬▒ce in ╬▒ l╬▒rger p╬▒n with ╬▒ sm╬▒ll ╬▒mount of hot w╬▒ter ╬▒nd b╬▒ke in ╬▒ prehe╬▒ted 350F/180C oven until set, ╬▒bout 60 minutes. (It is recommended th╬▒t you let the cheesec╬▒ke cool completely on the counter ╬▒nd then chill it in the fridge overnight, but itÔÇÖs ╬▒lso ╬▒m╬▒zing while still w╬▒rm from the oven!)
7. For the pec╬▒n c╬▒r╬▒mel topping:
8. He╬▒t the butter ╬▒nd sug╬▒r in ╬▒ sm╬▒ll s╬▒uce p╬▒n over medium he╬▒t until bubbling, let it bubble for 3 minutes, c╬▒refully ╬▒dd the he╬▒vy cre╬▒m, mix until smooth ╬▒nd ╬▒dd the cinn╬▒mon ╬▒nd pec╬▒ns ╬▒nd let cool before pouring on the cooled cheesec╬▒ke.
